Angel Hair Pasta with Golden Chanterelle Mushrooms

Angel hair pasta with golden chanterelle mushrooms in a garlic cream sauce.

1 lb angel hair pasta, cooked per directions

1/4 cup olive oil 

1 onion, chopped 

1 lb golden Chantrelle mushrooms, cleaned well & chopped

Salt and pepper, to taste

1 tsp oregano

1 Tbsp red wine vinegar 

3 cloves garlic

½ cup butter

2 cups heavy cream

Cheese rind, optional

Saute onion and and mushrooms in a large skillet over medium-low heat for about 5 minutes, until the onion is soft and translucent. Add salt, pepper, oregano, vinegar, garlic, butter, cream, and cheese rind, if using. Simmer over low heat for another 5-10 minutes or until the sauce is somewhat thickened. Stir in the hot pasta and enjoy with parmesan cheese grated on top.
