Asiago Cheese Sun Dried Tomato Turkey Scallopini

Sun dried tomato, shredded asiago cheese and breadcrumbs are pressed into turkey cutlets and fried in olive oil for an amazingly quick dinner. Great with a pot of rice.


1 lb turkey cutlets

2 cups bread crumbs

1 oz sun dried tomatoes, chopped

½ cup asiago cheese, grated

Salt and pepper, to taste

¼ cup olive oil

1 Tbsp capers, for garnish


Mix bread crumbs, sun dried tomatoes, asiago cheese and seasoning together in a pie plate. Press turkey cutlets into the mixture on both sides. Heat olive oil in a skillet over a medium heat setting. Fry turkey for 2-3 minutes per side. Garnish with capers and serve immediately, while warm.
