Citrus Salad

Winter fruits such as oranges, grapefruit, kumquats, etc are beautiful in a salad and full of vitamin c. This is my favorite salad of the season. Look for a citrusy flavored balsamic vinegar or just substitute the squeeze of a lemon. Delicious!
5 oz mixed baby greens
1 navel orange, peeled and sliced
1 grapefruit, peeled, sliced and quartered
3 oz kumquats, halved
2 green onions, sliced
2 oz apricot stilton cheese, grated or crumbled
2 Tbsp pistachio nuts
Vinaigrette:
⅔ cup extra virgin olive oil
⅓ cup grapefruit balsamic vinegar, or other fruit flavor
Salt or garlic salt and pepper, to taste
Layer salad ingredients on a platter or in a salad bowl. Whisk olive oil and a citrusy vinegar together with seasonings, and drizzle over salad just before serving.
