Cauliflower with Cheese Sauce

Al dente steamed cauliflower with a lovely sharp cheddar cheese sauce fragranced with dijon mustard, and fresh minced garlic.

1 head cauliflower, cut into florets

2 Tbsp butter 

2 Tbsp flour 

Salt and pepper, to taste

¼ tsp garlic salt 

1 tsp dijon mustard

1 ½ cups milk

1 cup sharp cheddar, shredded

3 cloves, garlic, minced

Steam the cauliflower in a large pan with water over medium-high heat for 7 to 10 minutes or until cooked to desired tenderness. In a medium-sized skillet, melt the butter and stir in the flour over medium-low heat. Allow to cook a minute or 2, until lightly turning a golden color. Add in the seasonings, dijon mustard, and slowly drizzle in the milk stirring to emulsify. Sprinkle in the cheese, and garlic and cook until thickened. Spoon over drained cauliflower.
