Checkers Napa Valley Salad with Dijon Mustard Dressing

A beautiful salad with apples, gorgonzola, walnuts, currants and a dijon dressing that can’t be beat. Checkers was my absolute favorite place from my college days and sadly is gone now. I have so many memories there with friends and my family. This is a great salad and they used the same dressing on their Greek salad...amazing. Thanks to Susan J Parker and her compilation of Napa Valley Mustard Festival Cookbook recipes.


⅔ cup olive oil

½ cup red wine vinegar

3 Tbsp sugar

⅓ cup dijon mustard

⅛ tsp salt 

Pepper, to taste

1 Tbsp poppy seeds 

4 cups mixed baby greens

1 apple, cubed

½ cup toasted walnuts, chopped

2 oz gorgonzola cheese, crumbled

2 Tbsp currants 

Whisk olive oil, vinegar, sugar, dijon, salt, pepper and oregano together until the mixture is emulsified. Stir in the poppy seeds. Store in a mason jar in the fridge until ready to use.

Toss salad greens in a serving bowl and top with the apple, walnuts, cheese and currants. Drizzle dressing over the top.
