Spring Strawberry Salad

Spring is here, and the strawberries are amazing! Farm-grown strawberries, green onions, persian cucumber and spring mixed greens are tossed with a strawberry and champagne balsamic dressing. Also, delicious with avocado, apricot stilton cheese crumbles and poppyseeds.

5 oz mixed baby greens

1 ½ pints strawberries, hulled and diced

2 green onions, sliced

1 persian or smallish cucumber, diced

Toss greens, berries, green onions and cucumber in a salad bowl and pour strawberry dressing over just before serving.

Dressing:

½ cup olive oil

⅓ cup champagne balsamic vinegar 

3 strawberries, hulled

¼ tsp dijon

Garlic salt, to taste

Pepper, to taste

Place ingredients in the blender and process until smooth. Pour over salad just before serving and store any left over in a small mason\jam jar.
