Cheesy Cauliflower

A cheesy cauliflower casserole with cheddar and Gruyere topped with asiago cheese. A comforting veggie side dish! Inspired by Krista Steckman of In Kristas Kitchen https://inkristaskitchen.com/cheesy-cauliflower-casserole/
1 cauliflower head, cut into florets
2 large shallots, diced
1 cup sour cream
1 ½ tsp salt
pepper, to taste
3 cloves garlic
½ tsp oregano
1 cup sharp white cheddar, shredded
½ cup gruyere cheese, shredded
½ cup asiago cheese, grated
Chives, snipped for garnish
Preheat oven to 350*. In a Dutch oven, bring cauliflower and a couple of inches of water to a boil. Simmer for 5 minutes, then drain. Mix sour cream, salt, pepper, garlic, oregano, cheddar, and gruyere cheese together, then mix with the cauliflower. Top with asiago cheese, then place in the oven and bake for 40 minutes. The cheesy top will be a beautiful golden color and the cauliflower will be al dente. Garnish with chives and serve hot.
