Lemon Butter Chicken Thighs with Tortellini

1 Tbsp olive oil
8 chicken thighs, bone-in skin-on
Salt and pepper, to taste
2 Tbsp butter
3 cloves garlic, minced
1 tsp oregano
1 cup chicken broth
1 cup heavy cream
¼ cup parmesan cheese, grated
1 lemon, juiced
1.5 lbs fresh or frozen cheese tortellini
2 cups baby spinach
Preheat oven to 400*. In a large skillet, heat olive oil over medium-high heat. Season chicken thighs with salt and pepper, cooking for 4 minutes per side, until golden. Add butter, garlic, oregano, chicken broth, heavy cream, parmesan cheese, and lemon juice, stirring until mixed. Bake in the oven for 15 minutes. Remove from the oven, stir the tortellini and spinach in the sauce and under the chicken a bit so the pasta is all covered. Cook over medium-high heat on the stove top for 3 minutes with a lid on. Check to make sure the chicken is cooked through with an instant thermometer, it should read a minimum of 165*.
