Cheesy Irish Potatoes
Irish potatoes will become your next favorite...right up there with Thanksgiving mashed potatoes. Think hashbrown like potatoes with a cream sauce and topped with cheddar cheese and french fried onions. Inspired and adapted from LillyfromPhilly. She says “substituting margarine or frozen hash browns would be a travesty” and she’s quite correct.
10 medium large potatoes, grated
1 small onion, grated
3 cloves garlic, grated (with potatoes)
2 Tbsp butter
1 tsp salt
Pepper, to taste
½ cup butter, melted
½ cup heavy cream
½ cup sour cream
1 ½ cups cheddar cheese, shreds
1 cup or a half can of french fried onions
Boil potatoes for 8-10 minutes and allow to cool. Peel off the skins with a paring knife. Slice one potato in half and insert the garlic, cut the rest of the potatoes small enough to fit into the food processor. Grate in the food processor (or by hand with a box grater) along with the onion; this may need to be done in a couple batches. Butter a 9.13 dish and mix together the grated potatoes (garlic) and onion. In a large mixing bowl whisk the butter, cream, sour cream and seasonings together. Pour over potatoes and top with cheese shreds and the french fried onions. Bake for about 30 minutes or until the cheese is golden/bubbly and the french fried onions are a golden brown.
