Zucchini with Mock Hollandaise Sauce

Thick zucchini slices barely sauteed and dipped in a lovely lemony sauce.

3 zucchini, sliced thick

1 Tbsp olive oil

Salt and pepper, to taste

Mock Hollandaise Sauce

½ cup mayonnaise

½ cup sour cream

1 Tbsp dijon mustard

¼ tsp lemon salt

Pepper, to taste

1 lemon, juiced

Heat olive oil in a large skillet on medium high and toss zucchini in with some salt and pepper. Stir around for 2-4 minutes so it's barely cooked.

Mix together in a medium mixing bowl the mayonnaise, sour cream, dijon, salt and pepper. Juice the lemon over and stir. Use as a dipping sauce for the zucchini.
