Artichoke Hummus

1 15-oz can chickpeas, drained

1 15-oz can artichoke hearts with brine

½ cup tahini

1 lemon, zested and juiced

3 cloves garlic

1 tsp salt

Black pepper, to taste

½ tsp cumin

¼ tsp aleppo chili flakes or red pepper flakes

1 Tbsp chopped parsley or green onion, for garnish

In a food processor, layer the chickpeas, artichoke hearts with brine, tahini, zest and juice of a lemon, salt, pepper, cumin, and chili flakes. Process until smooth. You can add up to ¼ cup additional water if you wish to thin it. Serve with herb garnish, a drizzle of olive oil, and extra artichoke hearts if desired.
