Bean Tomatillo Cheese Dip

Creamy pinto bean and stretchy cheese dip gets brightened by tomatillos. This delicious dip is great with chips, garnished with more cheese, green onions, tomatoes, sour cream…yummm!


2 cups pinto beans, mashed (or refried)

1 onion, diced

3 garlic cloves, minced

2 cups enchilada sauce

4 tomatillos, husked, washed and quartered

3 cups sharp cheddar cheese, shredded + more for garnish

1 green onion, sliced

1 tomato, diced, or pico de gallo

Sour cream

Tortilla chips


Mash beans in a large skillet with onion, garlic and enchilada sauce. Puree the tomatillos in a food processor or blender. Pour into the skillet and stir in with the cheddar cheese. Cook and mash to the desired consistency. Top with your favorite garnishes and serve warm with tortilla chips.
