Mediterranean Endive with Hummus

Cucumbers, kalamata olives, cherry tomatoes and feta star in this lovely veggie dip and finger food. This beautiful taste of the Mediterranean is healthy and delicious. Extra points if you can find both red and green endive to mix in even more color here.


2 heads of endive, separated

2 cups hummus

1 large cucumber, chopped

½ cup kalamata olives, halved

1 pint cherry tomatoes, chopped

1 green onion, sliced

4 oz feta cheese, crumbled

Olive oil, a drizzle

½ lemon, juiced

Salt and pepper, to taste


Spread a little hummus in the endive leaves and place them on the perimeter of a large platter. Spread a mound of hummus in the middle of the platter too. In a large mixing bowl, stir the cucumber, kalamata olives, cherry tomatoes, green onions and feta cheese. Drizzle olive oil and lemon juice over, season to taste and stir again. Spoon over the mound of hummus in the center of the platter letting some of the veggies spill onto the endive edges.
