Red Potato Goat Cheese Bites

Delicious baby red potatoes topped with goat cheese and served over a bed of pretty microgreens.
1 lb baby red potatoes, halved
3 oz goat cheese, crumbled
Olive Oil, a drizzle
1 lemon, halved
Freshly ground garlic or Onion salt
Salt, to taste
Freshly ground black pepper, to taste
Microgreens
Fill a medium-sized pot with cold water and add the halved baby potatoes. Cook them over high heat until they are fork-tender. Remove from heat and drain off the water. Season with onion or garlic salt and allow them to cool.
Spread some microgreens onto a platter or serving board. Poke a mound of goat cheese with a fork or pick, then poke into the potato with the flat side bottom-down. Place on top of the microgreens. Drizzle with olive oil and a squeeze of lemon juice. Sprinkle salt and pepper over all.
