Sourdough Cheese Crackers

Tangy and cheesy sourdough crackers are a cinch to make at home. I used unexpected cheddar but cheddar would be a great choice here.
¾ cup sourdough starter or discard
¾ cup grated cheese, cheddar, or other firm shredded cheese
1 tsp salt
3 Tbsp nutritional yeast, optional
3 Tbsp melted butter, divided
½ cup flour
Mix the sourdough starter, grated cheese, salt, yeast (if using), 2 tablespoons of butter, and flour in a stand mixer with a paddle attachment. Mix until the dough comes together. Wrap in a piece of parchment and press into a flattened rectangle. Refrigerate for 30 minutes. Preheat oven to 375*. When the dough has finished resting, roll into a large rectangle on a lightly floured piece of parchment. Roll until the dough is about 1/16 in thickness. Brush the dough with the remaining tablespoon of butter and sprinkle lightly with salt if desired. Place the parchment on a baking sheet and slice the dough into bite-size pieces using a dough roller or pizza cutter. Bake for about 15-18 minutes. The crackers will be lightly golden and crispy when done.
