Green beans are cooked to perfection, topped with browned butter garlic and almonds, then brightened with the fragrant zest of a cutie or other citrus you love and have on hand. A little flaky salt and voila. I’m always inspired by Chef Jeff, he says I should call them “Green Beans Almon-Deno”.
16 oz green beans, trimmed and cleaned
4 Tbsp butter
3 cloves garlic, minced
¼ cup almonds, chopped or sliced
Flaky salt, to taste
1 Tbsp mandarin or lemon zest
Bring a large stockpot of water to a boil and add green beans, cook for seven minutes. Meanwhile, in a large skillet over medium heat make the browned butter. As the butter begins to get foamy, add the garlic and almonds. When everything is golden and there are butter bits that have browned at the bottom of the skillet, it is done. If you overcook the mixture the garlic will taste sharp. Drain the green beans and toss with the browned butter mix. Spoon into your serving bowl, top with some flaky salt and the mandarin zest.
